Another Great Recipe!

When I was a little girl and we would go to the mall mom would stop at the candy counter in Sears. I don't think they still have one but, mom would buy us those little mints that were pink, green and yellow. Creamy little round wafers with little white sprinkle balls on top. Do you know the ones I am talking about. We loved them. That was our thing!! Well, I found a recipe that taste yummy and reminds me of them but, they are rolled in sugar instead of the little white balls but, oh so yummy!! I made them last night with the kids. The loved rolling the balls out and then smushing it flat. It was so easy!! I can't believe I didn't take pictures of the kids. Oh, well...Check it out....

Elegant Cream Cheese Mints

3 ounces of Cream Cheese, softened
3 tablespoons of Butter or margarine, softened
1/2 teaspoon vanilla extract
1/4 teaspoon desired food coloring
1/4 teaspoon peppermint extract
1 pound powdered sugar (3 1/2 to 4 cups)
1/3 granulated sugar

Beat cream cheese, butter, vanilla, food coloring and peppermint extract in a large bowl with electric mixer on medium speed until smooth, scraping side of bowl at least once. Gradually beat in powdered sugar on low speed until well combined, scraping bowl several times. (If necessary stir in remaining sugar with wooden spoon or knead candy on work surface sprinkled lightly with powdered sugar.)

Place granulated sugar in shallow bowl. Roll 2 teaspoons (we made ours much smaller) of cream cheese mixture into a ball. Roll ball in sugar until coated. Flatten ball with fingers or fork to make a patty. Place patty on cookie sheet. Line it with wax paper if you have it. You can also drizzle the mints with melted chocolate if you want too. Refrigerate until firm. Store in airtight container in the refrigerator.
