This is so yummy!! I order it all the time when we go out but, I have never really made many soups before so I have always been kind of hesitant because I didn't want to screw it up but, this is quick, easy and oh so yummy! Only takes about 20 minutes to make. I doubled the recipe because I knew I would be eating a lot of it...leftovers refrigerate well too!
Baked Potato Soup
2 large baking potatoes peeled, halved lengthwise and thinly sliced crosswise
3 cups of milk
Salt and pepper to taste
1 bunch scallions, white and green, sliced thin
4 slices bacon
1 cup shredded cheddar cheese (about 2 ounces)
1/4 cup sour cream
Directions:
In a large saucepan, combine the potatoes, 2 cups milk and 1 tsp salt. Cover and bring to a boil over medium-low, add the scallions whites, cover and simmer until tender, about 10-15 minutes. Add the remaining 1 cup milk and then puree the soup. You can just stick a mixer down into the pan if you want as well. Season with salt and pepper. Microwave the bacon at high power until crisp about 3 to 4 minutes then crumble. Divide the soup among 4 bowls and top with the shredded cheese, sour cream crumbled bacon and scallion greens.
I think this is my new favorite soup because it is fast and easy!!
