Sweet Potato Casserole

My oh my.... Last night I made some sweet potato casserole and it was sweet. The kids wanted me to make some just like Grandma Judy makes. They loved her special sweet potatoes but, I went to the store and couldn't find any like hers so I picked up some sweet potatoes and used a recipe from cooks.com and boy was it yummy but, it was sooo sweet. Diabetics pump up the insulin!! I think a better name would have been Sweet Potato Pudding or Pie.... Wow!! As I was mixing the ingredients together I realize they were almost the same as cookie batter. Maybe next time I will just make sweet potatoes and then have cookies for desert. If your kids won't eat their vegetable maybe you would like to try this recipe.

Sweet Potato Casserole

3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter

TOPPING:
1/3 cup flour

1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture. Bake at 350 degrees for 35 to 40 minutes.
