
This recipe is based on a dinner I had a local restaurant... It was so yummy I had to try to make if for myself...It turned out really moist and tasty.
First make this homemade Alfredo sauce. If you have a store bought kind that you like you can substitute it. This recipe taste a lot like Olive Garden’s Alfredo Sauce Recipe. It is simple and but, don't walk away or it will foam up and make a big mess!! It will thicken up as it cools off... If you have left overs refrigerate and warm it back up and it is just as good the next day...
Alfredo Sauce
2 cups heavy cream
1/8 tsp garlic powder
½ cup butter
1/8 tsp pepper
¼ cup Parmesan cheese
Bring to a boil over medium heat and boil for 12 to 20 minutes ( I do 20 minutes because I like it thick) until desired consistency. Stir frequently because it will boil up foamy out of the pan.
Chicken
4-6 Chicken Breast uncooked (pound it out flat)
1 Package of Shredded Colby/Monteray Jack Cheese
1 Package of Bacon
Alfredo Sauce from above
Preheat oven to 375 degrees. Spray the bottom of baking pan. Pound out the chicken breast and then put them in the baking sheet. Spoon Alfredo sauce over the chicken breast. You can just put a little on the top or you can drench it like I do. Then bake it for about 40 minutes or until the juices run clear and the inside is not pink. While the chicken is baking cook up the bacon nice and crispy. You can cook it in a skillet on the stove or broil for about 6-8 minutes. Once the chicken is cooked remove from the oven. Place 2-3 strips of bacon over each chicken breast and then sprinkle the cheese on top. Return to the oven and cook for another 10-15 minutes until the cheese is bubbly and golden.
